Ingredients

  • 1 1/2 cups butter softened
  • 1 cup powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 3 cups all purpose flour
  • 1/4 teaspoon salt
  • 11 ounces caramels (unwrapped)
  • 1 tablespoon evaporated milk or cream
  • 2 cups milk chocolate chips
  • 2 teaspoons shortening


Instructions

  1. Preheat the oven to 350 degrees F and line a sheet pan with parchment paper or a nonstick baking mat.
  2. In a mixer, beat the softened butter until light and fluffy. Then add the powdered sugar and mix until well combined.
  3. In the same bowl, add the vanilla extract, flour, and salt. Mix until the ingredients form a dough.
  4. Wrap the dough in plastic wrap and chill in the freezer for 20 minutes.
  5. Flour a work surface and roll the chilled dough out to a 1/2 inch thickness.
  6. Use a 2 or 3 inch round cookie cutter to cut out cookies and place them 1 inch apart on the prepared baking sheet.
  7. Bake the cookies for 12-13 minutes or until the edges are light brown, then repeat with any remaining dough.
  8. Cool the cookies on a wire rack.
  9. In a separate bowl, combine the caramels and evaporated milk. Microwave in 45 second increments until melted and stir until smooth.
  10. Spoon a generous amount of caramel onto each cookie and spread it to the edges with the back of the spoon.
  11. Allow the cookies to rest for about 20 minutes until the caramel firms up.
  12. In another bowl, combine the milk chocolate chips and shortening. Microwave in 30 second increments until melted and stir until smooth.
  13. Spread a spoonful of melted chocolate over each cookie, covering the caramel layer.
  14. Let the cookies sit until the chocolate has hardened, then serve.

Notes

For best results, ensure the butter is softened at room temperature before mixing.
You can substitute the milk chocolate chips with dark chocolate if you prefer a richer flavor.
These cookies are best enjoyed fresh but can be stored in an airtight container for a few days.
