- ½ cup (1 stick / 113 g) unsalted butter, room temperature
- 1 package (8 ounces) cream cheese, softened
- 2 cups confectioners’ sugar
- 2 teaspoons vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 15x10x1-inch sheet pan with nonstick spray.
- In a large bowl, blend together sugar, oil, eggs, and vanilla extract until smooth.
- Mix in the grated zucchini with all its liquid.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Combine the dry ingredients into the wet mixture, stirring gently until mixed. Avoid overmixing.
- Spread the batter evenly into the prepared sheet pan.
- Bake for 25 to 30 minutes or until a toothpick comes out clean or with a few moist crumbs. Allow to cool completely.
Notes
For extra flavor, consider adding chopped nuts or chocolate chips to the batter.
Ensure you do not squeeze the liquid out of the zucchini; it helps keep the bars moist.
These bars can be stored in an airtight container for several days.
