  • 1 ½ cups (126 g) graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • ¼ cup (50 g) granulated sugar
  • 2 packages (8 ounces each) cream cheese, room temperature
  • 2 large eggs, room temperature
  • ⅓ cup (67 g) granulated sugar
  • 3 tablespoons freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • ¾ cup (111 g) fresh blueberries
  • ¾ cup (124.5 g) fresh strawberries, washed, patted dry, chopped
  • ½ cup (61.5 g) fresh raspberries, whole or gently halved
  • ¾ cup (94 g) all-purpose flour
  • ¼ cup (50 g) light brown sugar, packed
  • ¼ teaspoon kosher salt
  • 5 tablespoons unsalted butter, melted


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9×9-inch baking dish with parchment paper, ensuring it extends up the sides for easy removal.
  3. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar until mixed well. Press this mixture into the bottom of the prepared baking dish.
  4. In a large bowl, beat the cream cheese until smooth using an electric mixer. Add in the eggs, ⅓ cup granulated sugar, lemon juice, vanilla extract, and salt. Mix until well combined and creamy.
  5. Fold in the fresh blueberries, chopped strawberries, and raspberries gently into the cheesecake filling.
  6. Spread the cheesecake mixture evenly over the graham cracker crust.
  7. In another bowl, combine all-purpose flour, light brown sugar, salt, and melted butter to form the crumb topping. Sprinkle it over the cheesecake layer.
  8. Bake in the preheated oven for 30-35 minutes or until the edges are set and the center slightly wiggles.
  9. Allow to cool completely before refrigerating for at least 2 hours before cutting into bars.

Notes

For best slicing results, chill the bars overnight.
Feel free to substitute any of the berries with your favorites or seasonal options.
The crust can also be made with digestive biscuits for a variation.
