- 1/4 cup (50g) granulated sugar
- 1 and 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- 2 cups (454ml) full-fat buttermilk
- 2 teaspoons pure vanilla extract
- maple syrup and butter, for serving
Instructions
- In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground nutmeg; whisk well to combine.
- In a separate bowl, beat the eggs lightly. Add in the buttermilk and vanilla, mixing until well combined. Stir this mixture into the dry ingredients until just combined.
- Pour batter in 1/3 cupfuls onto a hot, buttered pan or griddle, taking care not to overcrowd the pan.
- Cook for about 2 minutes until small bubbles form on the top, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
- Serve warm topped with maple syrup and butter.
Notes
For a spicier flavor, consider adding cinnamon along with nutmeg.
These pancakes can be frozen for later enjoyment; simply reheat in a toaster or microwave.
