Instructions
- Preheat your oven to 375°F and line 2 baking sheets with parchment paper.
- In a stand mixer, combine the butter and granulated sugar, beating on medium-high until light and fluffy for about 3 minutes.
- Add the egg, egg yolk, vanilla, and almond extract; mix on low speed until smooth, about 30 seconds.
- Gradually mix in the baking soda, salt, and flour until just combined.
- Scoop large dough balls (about ¼ cup each) onto the lined baking sheets, placing 6-7 per sheet.
- Bake for 11-14 minutes, until golden around the edges and slightly cracked on top. Avoid overbaking for a chewy texture.
- In a bowl, beat the cream cheese and butter until smooth. Add vanilla, a pinch of salt, and powdered sugar, mixing until creamy.
- Once the cookies have cooled, spread a layer of frosting on each cookie and top with diced fresh fruit.
Notes
Make sure the butter is at room temperature for easy mixing.
