Ingredients

Scale
  • 4 cups fresh ripe peaches, pitted and sliced
  • 1 cup fresh raspberries
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • ½ cup unsalted butter, melted
  • 1 ¼ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract
  • Vanilla Ice cream
  • Whipped cream

Instructions

  1. Gently toss together sliced peaches, raspberries, sugar, cinnamon, nutmeg, and lemon juice in a medium mixing bowl until coated.
  2. Let the fruit mixture sit at room temperature while preparing the batter.
  3. Preheat the oven to 350°F. Pour melted butter into a 9×13-inch baking dish, coating the bottom evenly. Set aside.
  4. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  5. Add milk and vanilla to the dry ingredients, stirring just until smooth; do not overmix. The batter should be thick but pourable.
  6. Pour the batter evenly over the melted butter in the baking dish without stirring.
  7. Spoon the fruit mixture over the batter, including juices from the bowl.
  8. Bake for 45-50 minutes until the top is golden brown, edges bubble, and a toothpick comes out clean.
  9. Let the cobbler cool for at least 15 minutes before serving.
  10. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

Allow the cobbler to cool slightly for better slicing and serving.
Use ripe fruits for the best flavor and texture.
Feel free to substitute other berries based on your preference.
