  • 1 cup packed dark brown sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed cocoa
  • 1 teaspoon espresso powder, optional
  • 1 teaspoon kosher salt
  • 1 1/4 cups chopped chocolate, divided
  • 3/4 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon heavy cream, or whole milk
  • 3 cups puppy chow


Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla extract, whisking until combined. Stir in the flour, cocoa powder, espresso powder (if using), and salt until just combined. Fold in 1 cup of the chopped chocolate.
  3. Spread the batter evenly into the prepared pan and sprinkle the remaining ¼ cup chocolate on top. Bake for 25 to 35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Cool completely in the pan.
  4. In a stand mixer with a paddle attachment, beat the peanut butter and butter until smooth and creamy. Add the powdered sugar, salt, vanilla extract, and heavy cream, beating until light and fluffy.
  5. Spread the peanut butter frosting evenly over the cooled brownies, then sprinkle puppy chow on top, gently pressing down to adhere.
  6. Cut into squares and serve.

Notes

Be careful not to overbake the brownies; check them at the 25-minute mark.
You can add more peanut butter or chocolate if desired for extra flavor.
