Instructions
- Preheat the oven to 350 degrees. Prepare a baking sheet with parchment paper.
- In a small bowl, whisk together the flour, baking soda, baking powder, and pumpkin pie spice.
- In a large bowl, blend the sugars, pumpkin puree, and oil until smooth.
- Incorporate the egg and vanilla into the mixture.
- Gradually mix the dry ingredients into the wet until fully integrated.
- Drop 1 1/2 tbsp portions of dough onto the prepared baking sheet, ensuring space for spreading.
- Bake for about 10 minutes, then allow cooling for a few minutes on the sheet before moving them to a cooling rack.
- Meanwhile, prepare the filling by creaming together the softened cream cheese and butter until smooth.
- Blend in the vanilla and 1 cup of powdered sugar. Adjust with additional powdered sugar for desired consistency.
- To assemble, spread filling on the flat side of one cookie and top with another cookie to create a sandwich.
