  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 2 medium eggs
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • ⅓ cup brown sugar
  • 3 tablespoons butter melted
  • ½ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ cup powdered sugar
  • ¼ cup honey


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In another bowl, combine the pumpkin puree, vegetable oil, eggs, granulated sugar, brown sugar, and vanilla extract; whisk until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients, stirring gently until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Notes

Ensure not to overmix the batter for a fluffy texture.
You can substitute vegetable oil with melted coconut oil for a different flavor.
Store leftover bread in an airtight container for up to three days.
