- 1 banana peeled, sliced, and frozen
- 3 cups frozen pineapple chunks
- 1/2 cup full-fat coconut cream
- 1/4 cup sweetened pineapple juice
- 2-3 teaspoons freshly squeezed lemon juice
- 1/2 teaspoon pure vanilla extract
- honey to taste
Instructions
- Combine the banana, 1 1/2 cups of pineapple, coconut cream, pineapple juice, 2 teaspoons of lemon juice, and vanilla in a food processor.
- Process the mixture for about 5 minutes until mostly smooth.
- Add the remaining 1 1/2 cups of pineapple and process for an additional 2 to 3 minutes until smooth and creamy. Pulse as needed to break up large chunks.
- Taste the mixture and adjust sweetness with additional lemon juice or honey, if desired. Serve immediately.
Notes
For a thicker consistency, use more frozen fruit.
This treat is best served fresh, but leftovers can be stored in the freezer and blended again before serving.
