Ingredients

  • 1 banana peeled, sliced, and frozen
  • 3 cups frozen pineapple chunks
  • 1/2 cup full-fat coconut cream
  • 1/4 cup sweetened pineapple juice
  • 2-3 teaspoons freshly squeezed lemon juice
  • 1/2 teaspoon pure vanilla extract
  • honey to taste


Instructions

  1. Combine the banana, 1 1/2 cups of pineapple, coconut cream, pineapple juice, 2 teaspoons of lemon juice, and vanilla in a food processor.
  2. Process the mixture for about 5 minutes until mostly smooth.
  3. Add the remaining 1 1/2 cups of pineapple and process for an additional 2 to 3 minutes until smooth and creamy. Pulse as needed to break up large chunks.
  4. Taste the mixture and adjust sweetness with additional lemon juice or honey, if desired. Serve immediately.

Notes

For a thicker consistency, use more frozen fruit.
This treat is best served fresh, but leftovers can be stored in the freezer and blended again before serving.
