  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla bean paste or extract
  • 2 to 3 large peaches (sliced)


Instructions

  1. In a shallow bowl, whisk together the half-and-half, eggs, vanilla extract, sugar, and cinnamon until smooth.
  2. Dip each slice of the bread into the custard mixture for about 20 seconds on each side.
  3. Heat a griddle over medium-low heat, greasing it with butter before cooking the slices for 3-5 minutes per side until golden brown.
  4. While cooking, whip together heavy cream, powdered sugar, and vanilla bean paste until soft-to-stiff peaks form.
  5. Slice fresh peaches into thin wedges, optionally tossing with a bit of sugar to enhance their flavor.
  6. Stack the warm French toast slices, add whipped cream, fresh peach slices, and drizzle with maple syrup before serving.
