  • 4 ripe peaches, 1 lb peaches cubed
  • 2/3 cup brown sugar, light brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch


Instructions

  1. Cube the peaches, peeling them first if they are fresh. If frozen, make sure to thaw them.
  2. In a medium saucepan over medium heat, combine the peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Stir well.
  3. Heat the mixture until the peach juice separates and it comes to a simmer.
  4. Cook for 10 minutes, stirring occasionally until thickened. Use a potato masher to lightly mash about 20% of the peaches. Cook for 1 more minute and then remove from heat. Allow to cool completely before using.

Notes

Ensure peaches are ripe for the best flavor.
For a thicker filling, you can increase the amount of cornstarch slightly if desired.
Cool the filling completely before adding it to your pie crust.
