  • 2 ¾ cups (360 grams) all-purpose flour
  • 1 cup (213 grams) packed light or dark brown sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (226 grams) butter, cold and cut into small cubes
  • 1 large egg, whisked lightly to break it up
  • 4-5 cups (680-840 grams) peaches, chopped into ½-inch pieces
  • ¼ cup (50 grams) granulated sugar
  • 2 tablespoons lemon juice
  • 4 teaspoons cornstarch
  • ¼-½ teaspoon ground cinnamon (per your preference)
  • ⅛ teaspoon ground ginger (optional)


Instructions

  1. Preheat the oven to 375°F and grease a 9×13 inch baking pan. Line with parchment paper allowing it to overhang the sides for easy lifting later.
  2. In a medium bowl, mix together the flour, brown sugar, lemon zest, baking powder, and salt. Add the cold, cubed butter and toss within the mixture.
  3. Use a fork or pastry cutter to blend the cubed butter until the mixture resembles small peas. Add the whisked egg and combine until the dough is crumbly, then use your hands to form it into a cohesive mixture.
  4. Press half of the dough into the bottom of the prepared pan, reserving the remaining half.
  5. In a large bowl, toss the chopped peaches with sugar, lemon juice, cornstarch, ground cinnamon, and ginger. Spread this mixture evenly over the bottom crust.
  6. Sprinkle the remaining crumb mixture over the peaches, pressing it together with your hands to create clumps.
  7. Bake for 45-55 minutes or until the top is lightly golden brown. Allow to cool completely before slicing, or serve warm with vanilla ice cream for extra enjoyment.
  8. Store the bars in the refrigerator for best results and ease of slicing. For longer storage, freeze unsliced bars wrapped in plastic for up to 1 month.

Feel free to substitute granulated sugar with brown sugar for a richer sweetness.
