  • ½ cup (122 g) whole milk, room temperature
  • ½ cup (109 g) vegetable oil
  • 1 large egg, room temperature

  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ½ teaspoon cinnamon
  • 2 cups peaches, peeled, diced (fresh or canned, well-drained)
  • ⅔ cup (83 g) all-purpose flour
  • ¼ cup (50 g) light brown sugar, packed
  • ½ teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • 4 tablespoons unsalted butter, cold, cubed
  • 1 cup (125 g) confectioners’ sugar
  • 3 to 4 tablespoons reserved peach syrup, or 2 to 3 tablespoons milk


Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick spray and line it with parchment paper.
  2. In a large bowl, combine granulated sugar, brown sugar, milk, vegetable oil, egg, and vanilla. Whisk until smooth.
  3. In another bowl, mix together all-purpose flour, baking powder, kosher salt, and cinnamon.
  4. Gradually mix the dry ingredients with the wet mixture until just combined.
  5. Fold in the diced peaches gently.
  6. Transfer the batter to the prepared loaf pan and set aside.

Notes

Using fresh peaches adds the best flavor, but canned peaches can be used if well-drained.
Ensure that ingredients like milk and egg are at room temperature for optimal mixing.
You can drizzle peach syrup or milk on top for added sweetness before serving.
