  • 3 pounds red potatoes
  • 30 ounce jar hellman’s real mayonnaise
  • 1 pound bacon cooked and crumbled
  • 1 cup shredded colby-jack cheese
  • 3 green onions sliced
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper


Instructions

  1. Boil red potatoes in a large pot with cover until fork tender.
  2. Once cooked, remove from heat and allow to cool for ten minutes before dicing them into small pieces.
  3. In a large mixing bowl, combine the diced potatoes, mayonnaise, crumbled bacon, cheese, sliced green onions, salt, and pepper.
  4. Stir the mixture until well combined and refrigerate until ready to serve.

Notes

For added flavor, consider using applewood smoked bacon.
