- ½ cup unsalted butter, cold
- 1 cup all-purpose flour
- ¼ cup powdered sugar
- 1 cup granulated sugar
- 2 tablespoons all-purpose baking
- ½ teaspoon baking powder
- 2 large eggs
- 1 lemon, zested & juiced
- 1 cup sweetened, shredded coconut, divided
Instructions
- Preheat your oven to 350 degrees F and line an 8 or 9-inch square baking dish with parchment paper.
- In a large mixing bowl with a paddle attachment, combine the crust ingredients on low speed until crumbly. Alternatively, mix them by hand using a pastry cutter.
- Press the crumb mixture into the bottom of the prepared baking dish. Bake for 15 minutes.
- While the crust is baking, prepare the lemon filling in the same bowl by mixing together sugar, flour, baking powder, eggs, lemon zest, and lemon juice until well blended.
- Once the crust is baked, pour the lemon filling over it immediately, then sprinkle ½ cup of shredded coconut on top.
- Put the baking pan back in the oven and bake for an additional 10 minutes, then add the remaining coconut and bake for another 10 minutes.
- Allow the bars to cool, then refrigerate for at least 2 hours before cutting into squares. Dust with powdered sugar before serving.
Notes
Make sure to use fresh lemon juice for the best flavor.
You can adjust the amount of coconut to your taste, adding more or less as desired.
These bars can be stored in the refrigerator for up to a week.
