  • 1 cup (2 sticks / 227 g) unsalted butter, softened
  • ¾ cup (90 g) confectioners' sugar
  • ½ teaspoon kosher salt
  • 1 tablespoon fresh key lime zest
  • 2 tablespoons key lime juice, or regular lime juice
  • ½ teaspoon vanilla extract
  • 2 ¼ cups (280 g) all-purpose flour
  • 4 ounces cream cheese, room temperature
  • ¼ cup (½ stick / 57 g) unsalted butter, room temperature
  • 2 to 2 ½ cups (240 g to 300 g) confectioners' sugar
  • 1 tablespoon key lime juice
  • 1 teaspoon key lime zest
  • 1 pinch kosher salt


Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the softened butter, confectioners’ sugar, kosher salt, and key lime zest until light and fluffy, about 3 to 4 minutes.
  3. Stir in the key lime juice and vanilla extract until well combined.
  4. Gradually add the flour and mix just until a soft dough forms. Avoid overmixing.
  5. Scoop the dough into portions of about 2 tablespoons, roll them into balls, and place them on the prepared baking sheet.
  6. Using the bottom of a glass, gently press down each cookie to about ½-inch thick.
  7. Bake in the preheated oven for 10 to 13 minutes, or until the edges are set and barely golden.
  8. Allow the cookies to cool completely on the pan or transfer to a wire rack before frosting.
