- ¾ cup (90 g) confectioners' sugar
- ½ teaspoon kosher salt
- 1 tablespoon fresh key lime zest
- 2 tablespoons key lime juice, or regular lime juice
- ½ teaspoon vanilla extract
- 2 ¼ cups (280 g) all-purpose flour
- 4 ounces cream cheese, room temperature
- ¼ cup (½ stick / 57 g) unsalted butter, room temperature
- 2 to 2 ½ cups (240 g to 300 g) confectioners' sugar
- 1 tablespoon key lime juice
- 1 teaspoon key lime zest
- 1 pinch kosher salt
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, beat together the softened butter, confectioners’ sugar, kosher salt, and key lime zest until light and fluffy, about 3 to 4 minutes.
- Stir in the key lime juice and vanilla extract until well combined.
- Gradually add the flour and mix just until a soft dough forms. Avoid overmixing.
- Scoop the dough into portions of about 2 tablespoons, roll them into balls, and place them on the prepared baking sheet.
- Using the bottom of a glass, gently press down each cookie to about ½-inch thick.
- Bake in the preheated oven for 10 to 13 minutes, or until the edges are set and barely golden.
- Allow the cookies to cool completely on the pan or transfer to a wire rack before frosting.
Notes
Feel free to adjust the key lime juice to your taste for a more intense flavor.
Ensure the butter is perfectly softened for easier mixing and a fluffier texture.
Store the cookies in an airtight container to keep them fresh.
