- ¾ cup (170 grams) unsalted butter, softened to room temperature
- ½ cup (100 grams) granulated sugar
- ½ cup (55 grams) powdered sugar
- 1 large egg
- 2 teaspoons vanilla extract

- ½ teaspoon cream of tartar

- 8 oz (227 grams) cream cheese, softened to room temperature
- 1 cup (114 grams) powdered sugar, sifted
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 cups (455 grams) heavy cream
- 2-3 cups fresh fruit, sliced or chopped small
Instructions
- Preheat your oven to 350°F and line a sheet pan with parchment paper or a silicone baking mat.
- In a bowl, beat the softened butter and sugars together until smooth and creamy for about 3-5 minutes. Next, add the egg and vanilla extract, mixing until just combined.
- In a separate bowl, mix the flour, baking soda, cream of tartar, and salt. Gradually add this mixture to the wet ingredients, mixing on low speed until combined. The dough might be crumbly initially but will eventually come together.
- Scoop the dough into rounded tablespoons (using a medium 1.5 Tbsp cookie scoop is ideal), roll them into balls, and place them 2 inches apart on the prepared sheet pan. Slightly flatten the dough balls with your hand.
- Bake for 9-10 minutes until the bottoms are just golden brown. Allow cooling on the pan for 5 minutes before transferring to a cooling rack.
- Store the cookies in an airtight container at room temperature for up to 1 week, or freeze for a month or more.
