  • 1 ½ cups granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 cup unsalted butter, softened to room temperature

  • 1 pinch kosher salt
  • 3 cups powdered sugar
  • 3 Tablespoons milk
  • 1 drop blue food coloring, optional
  • sprinkles, optional


Instructions

  1. Beat butter and sugar in a large bowl for 2 minutes on medium high with an electric mixer, scraping the sides down occasionally.
  2. Add the vanilla and eggs, then beat until fully combined.
  3. Mix in the flour, baking powder, and salt until just blended.
  4. Line a 15x10x1 baking sheet with parchment paper, then drop the dough onto the sheet and press it out evenly using floured hands.
  5. Bake in a preheated oven at 350°F for 15-18 minutes, or until the edges start to brown. Remove from the oven and let cool completely.
  6. For the frosting, beat together the butter and vanilla on high for 2 minutes until fluffy.
  7. Add salt, powdered sugar, and milk, and beat for 3-5 minutes until fluffy and well blended. Mix in food coloring if using.
  8. Spread the frosting over the cooled cookie bars and add sprinkles if desired. Cut into squares and enjoy!
