Instructions
- Place the softened goat cheese into a medium bowl.
- Add minced pitted cherries to the bowl.
- Pour in 1 1/2 tablespoons of honey.
- Mix the goat cheese, cherries, and honey thoroughly until well combined.
- Spray your hands with nonstick cooking spray.
- Shape the mixture into a single ball using your hands.
- Put the finely chopped pecans into a shallow bowl.
- Roll the cheese ball in the pecans until coated.
- Press the pecans into the cheese ball gently until fully covered.
- Wrap the coated cheese ball tightly in plastic wrap.
- Refrigerate for several hours to let the flavors meld and the cheese to set.
- When ready to serve, unwrap the cheese ball.
- Place it on a serving board.
- Drizzle additional honey over the cheese ball.
- Serve immediately with crackers, crusty bread, apple slices, or pear slices.
Notes
For a creamier texture, let the goat cheese sit at room temperature for about 30 minutes before mixing.
Feel free to substitute walnuts or almonds for the pecans if desired.
