  • 6 oz goat cheese, softened
  • 1/2 cup pitted cherries, minced
  • 1 1/2 cups finely chopped pecans
  • 1 1/2 tbsp honey, plus more for drizzling

Instructions

  1. Place the softened goat cheese into a medium bowl.
  2. Add minced pitted cherries to the bowl.
  3. Pour in 1 1/2 tablespoons of honey.
  4. Mix the goat cheese, cherries, and honey thoroughly until well combined.
  5. Spray your hands with nonstick cooking spray.
  6. Shape the mixture into a single ball using your hands.
  7. Put the finely chopped pecans into a shallow bowl.
  8. Roll the cheese ball in the pecans until coated.
  9. Press the pecans into the cheese ball gently until fully covered.
  10. Wrap the coated cheese ball tightly in plastic wrap.
  11. Refrigerate for several hours to let the flavors meld and the cheese to set.
  12. When ready to serve, unwrap the cheese ball.
  13. Place it on a serving board.
  14. Drizzle additional honey over the cheese ball.
  15. Serve immediately with crackers, crusty bread, apple slices, or pear slices.

Notes

For a creamier texture, let the goat cheese sit at room temperature for about 30 minutes before mixing.
Feel free to substitute walnuts or almonds for the pecans if desired.
