Ingredients
Scale
- 1/2 cup warm water
- 1 envelope instant yeast
- 4 1/2 cups all-purpose flour, plus more if needed
- 4 large eggs
- 1 1/4 cups sugar, divided
- 2 teaspoons coarse salt
- 1 stick unsalted butter, at room temperature, plus 1/2 stick, melted, and more for dish
- 2 tablespoons ground cinnamon
- 1 cup powdered sugar
- 1/2 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 2 tablespoons whole milk
- 1 teaspoon vanilla extract
Instructions
- Combine warm water, yeast, and 1/2 cup of flour in a stand mixer bowl until a thick paste forms.
- Stir in eggs, 1/4 cup of sugar, and salt until combined.
- Attach the dough hook and add the remaining flour; knead on medium speed for 4 to 5 minutes until smooth.
- Incorporate room temperature butter, kneading until the dough is smooth and elastic (about 10 minutes).
- If the dough is sticky, add a bit more flour.
- Turn dough out onto a clean surface and knead by hand until smooth (about 3 minutes).
- Move dough to a clean bowl, cover, and let rise until doubled (about 1.5 to 2 hours). Punch down the dough to release air bubbles.
- Butter a 9-inch pie plate. In a small bowl, mix the remaining sugar and cinnamon.
- Roll the dough into 1-inch balls; dip each in melted butter and roll in cinnamon sugar.
- Arrange on the prepared pie plate, stacking to form a dome shape. Cover with plastic wrap and let rise until puffy (about 1 hour).
- Preheat the oven to 350°F. Place the pie dish on a baking sheet and bake for 50 to 55 minutes until golden and firm.
- For the glaze, whisk together powdered sugar, salt, melted butter, milk, and vanilla until smooth.
- Let bites cool for 15 minutes before drizzling with the glaze. Serve warm.
Notes
Ensure the butter is at room temperature for easier incorporation into the dough.
For a stronger flavor, consider adding pecans or walnuts to the cinnamon sugar mixture.
Store leftover bites in an airtight container for up to 3 days.
