  • 1 envelope instant yeast
  • 4 1/2 cups all-purpose flour, plus more if needed
  • 4 large eggs
  • 1 1/4 cups sugar, divided
  • 2 teaspoons coarse salt
  • 1 stick unsalted butter, at room temperature, plus 1/2 stick, melted, and more for dish
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract


Instructions

  1. Combine warm water, yeast, and 1/2 cup of flour in a stand mixer bowl until a thick paste forms.
  2. Stir in eggs, 1/4 cup of sugar, and salt until combined.
  3. Attach the dough hook and add the remaining flour; knead on medium speed for 4 to 5 minutes until smooth.
  4. Incorporate room temperature butter, kneading until the dough is smooth and elastic (about 10 minutes).
  5. If the dough is sticky, add a bit more flour.
  6. Turn dough out onto a clean surface and knead by hand until smooth (about 3 minutes).
  7. Move dough to a clean bowl, cover, and let rise until doubled (about 1.5 to 2 hours). Punch down the dough to release air bubbles.
  8. Butter a 9-inch pie plate. In a small bowl, mix the remaining sugar and cinnamon.
  9. Roll the dough into 1-inch balls; dip each in melted butter and roll in cinnamon sugar.
  10. Arrange on the prepared pie plate, stacking to form a dome shape. Cover with plastic wrap and let rise until puffy (about 1 hour).
  11. Preheat the oven to 350°F. Place the pie dish on a baking sheet and bake for 50 to 55 minutes until golden and firm.
  12. For the glaze, whisk together powdered sugar, salt, melted butter, milk, and vanilla until smooth.
  13. Let bites cool for 15 minutes before drizzling with the glaze. Serve warm.

Notes

Ensure the butter is at room temperature for easier incorporation into the dough.
For a stronger flavor, consider adding pecans or walnuts to the cinnamon sugar mixture.
