  • ⅓ cup (67 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tablespoons (30 g) sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups shredded zucchini, lightly blotted with a towel
  • ½ cup (90 g) semi-sweet chocolate chips
  • 3 tablespoons unsalted butter, softened
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) confectioners' sugar
  • 3 tablespoons whole milk or heavy cream, plus more as needed


Instructions

  1. Preheat the oven to 350°F and prepare an 8×8-inch square baking pan by spraying it with nonstick spray and lining it with parchment paper.
  2. In a medium bowl, mix the flour, cocoa powder, baking soda, baking powder, and salt together thoroughly.
  3. In a large bowl, combine the vegetable oil, granulated sugar, brown sugar, eggs, sour cream, and vanilla extract until smooth. Stir in the shredded zucchini.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined, taking care not to overmix.
  5. Gently fold in the chocolate chips until evenly distributed throughout the batter.
  6. Transfer the batter to the prepared pan and spread it evenly.
  7. Bake for 32 to 38 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Once baked, allow the cake to cool completely in the pan on a wire rack before frosting.

Notes

For a richer flavor, use high-quality cocoa powder.
Ensure to grate the zucchini finely for an even texture in the cake.
