Ingredients

  • 1 1/2 cups finely grated zucchini (about 1 1/2 medium zucchini)
  • 2 cups all purpose flour, spooned and leveled
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/3 cup sour cream
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups dark chocolate chips, plus more for sprinkling on top
  • flaky sea salt, for sprinkling on top (optional)


Instructions

  1. Preheat the oven to 350F and prepare a 9×5 loaf pan with greased parchment paper.
  2. Grate the zucchini into a measuring cup until you have 1 1/2 cups, then squeeze out excess moisture. Set aside.
  3. In a medium bowl, mix the flour, baking soda, baking powder, and kosher salt.
  4. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined. Then mix in the sour cream, eggs, vanilla extract, and the squeezed zucchini.
  5. Add the dry ingredients to the wet mixture and gently fold using a rubber spatula until just combined, with some flour still visible.
  6. Stir in the dark chocolate chips until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle additional chocolate chips on top.
  8. Bake for 1 to 1 hour 10 minutes, using a toothpick to check for doneness; it should come out clean.
  9. Let the bread cool in the pan for 30-40 minutes before transferring to a cooling rack, then top with flaky sea salt, slice, and serve.

Notes

Ensure to wring out excess water from the zucchini to prevent a soggy bread.
You can mix and match different types of chocolate chips or add nuts for additional texture.
Store the bread covered at room temperature for up to 3 days.
