- 1 1/2 cups finely grated zucchini (about 1 1/2 medium zucchini)
- 2 cups all purpose flour, spooned and leveled
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 cup unsalted butter, melted and cooled
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/3 cup sour cream
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups dark chocolate chips, plus more for sprinkling on top
- flaky sea salt, for sprinkling on top (optional)
Instructions
- Preheat the oven to 350F and prepare a 9×5 loaf pan with greased parchment paper.
- Grate the zucchini into a measuring cup until you have 1 1/2 cups, then squeeze out excess moisture. Set aside.
- In a medium bowl, mix the flour, baking soda, baking powder, and kosher salt.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined. Then mix in the sour cream, eggs, vanilla extract, and the squeezed zucchini.
- Add the dry ingredients to the wet mixture and gently fold using a rubber spatula until just combined, with some flour still visible.
- Stir in the dark chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle additional chocolate chips on top.
- Bake for 1 to 1 hour 10 minutes, using a toothpick to check for doneness; it should come out clean.
- Let the bread cool in the pan for 30-40 minutes before transferring to a cooling rack, then top with flaky sea salt, slice, and serve.
Notes
Ensure to wring out excess water from the zucchini to prevent a soggy bread.
You can mix and match different types of chocolate chips or add nuts for additional texture.
Store the bread covered at room temperature for up to 3 days.
