Ingredients

  • 3/4 cup warm milk (not hot)
  • 2 1/4 tsp active dry yeast
  • 4 tbsp granulated sugar, divided
  • 3 1/2 cups all-purpose flour
  • 2 large eggs, room temp
  • 4 tbsp unsalted butter, melted, divided (3 tbsp for batter, 1 tbsp to brush tops)
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • coconut oil to brush over babkas, optional
  • 1 cup heavy whipping cream
  • 1/4 cup granulated sugar
  • 8 oz semi-sweet chocolate chips


Instructions

  1. Add warm milk to a mixing bowl and sprinkle with active dry yeast. Let sit for 7 minutes.
  2. Whisk in 1/2 cup of flour and 2 tablespoons of sugar into the yeast mixture.
  3. Cover the bowl and let rise in a warm place for 25-30 minutes until puffed.
  4. Add eggs, melted butter, remaining sugar, salt, and vanilla extract to the mixture.
  5. Switch to a dough hook and add remaining flour gradually, mixing until incorporated.
  6. Knead on low speed for 8-10 minutes until the dough is barely sticky.
  7. Cover and let rise in a warm oven for an hour until doubled in size.
  8. Prepare the chocolate ganache by heating cream and sugar, stirring until dissolved, then pour over chocolate chips.
  9. Whisk until smooth and let cool to room temperature.
  10. Divide the dough in half and roll each piece into a rectangle.
  11. Spread ganache on the dough, roll tightly, and refrigerate for 15 minutes.
  12. Cut the dough lengthwise and twist the halves together.
  13. Transfer to parchment-lined loaf pans and let rise until puffy.
  14. Preheat oven to 350°F and brush with melted butter before baking for 30 minutes.

Notes

Feel free to brush the tops with coconut oil for a shiny finish after baking.
If the dough is too sticky, add a little extra flour as needed during kneading.
Chilling the ganache can help it achieve the perfect consistency for spreading.
