- 1 9" frozen or homemade pie crust
- 1/2 cup unsalted butter, room temperature
- 1 1/2 cup granulated sugar
- 2 tbsp yellow cornmeal
- 1 tbsp all purpose flour
- 4 large eggs, room temperature
- 1/3 cup buttermilk, room temperature
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 tsp lemon zest, optional
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and position a rack in the center.
- Prepare the pie crust; if using a homemade crust, roll it out into a pie plate and poke holes in the sides and bottom with a fork. Pre-bake the crust for 10 minutes, lined with parchment and filled with pie weights.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the cornmeal and flour, mixing until well combined.
- Incorporate the room-temperature eggs one at a time, making sure to beat well after each addition.
- Mix in the buttermilk, vanilla, lemon juice, zest, and salt until smooth and combined.
- Pour the filling mixture into the pre-baked crust and place it in the oven.
- Bake for 50-60 minutes until the edges are set but the center remains slightly jiggly; cover with aluminum foil if it browns too quickly.
- Let the pie cool on a rack for about 3 hours at room temperature before serving.
Notes
For added flavor, try using lime juice instead of lemon.
Letting the pie cool completely enhances its flavor and texture.
Serve with whipped cream for an extra treat.
