  • 4 cups fresh cherries, pitted and halved (600g)
  • 2/3 cup granulated sugar (135g)
  • 2 tablespoons cornstarch (16g)
  • 2 tablespoons fresh lemon juice (30ml)
  • 1 teaspoon vanilla extract (5ml)
  • 1/4 teaspoon almond extract
  • 6 tablespoons butter (85g)
  • 1 cup all-purpose flour (125g)
  • 1 cup granulated sugar (200g)
  • 2 teaspoons baking powder (8g)
  • 1/4 teaspoon salt
  • 3/4 cup milk (180ml)
  • ground cinnamon


Instructions

  1. Prepare the cherry filling by combining sugar, cornstarch, lemon juice, vanilla extract, and almond extract in a saucepan. Stir and add cherries, cooking until the sugar dissolves and the mixture slightly thickens.
  2. Preheat the oven to 350°F (175°C). Melt the butter by slicing it into a 9×13-inch baking dish and placing it in the oven. Once melted, remove the pan.
  3. In a large bowl, mix the flour, sugar, baking powder, and salt. Stir in the milk until just combined. Pour this batter over the melted butter and smooth into an even layer.
  4. Spoon the cherry mixture over the batter, allowing it to rise during baking. Sprinkle cinnamon on top. Bake for 40-45 minutes or until golden brown.
  5. Serve warm, optionally with a scoop of ice cream.

Notes

For best results, use fresh cherries in season.
Feel free to adjust the sugar based on cherry sweetness.
