Instructions

  2. In another bowl, combine egg yolks, buttermilk, melted butter, and vanilla extract.
  3. Mix the wet ingredients into the dry ingredients until just combined.
  4. In a clean bowl, beat the egg whites until soft peaks form.
  5. Gently fold the egg whites into the batter until no white streaks remain.
  6. Preheat a waffle iron and spray with cooking spray if needed.
  7. Pour the batter into the preheated waffle iron and cook until golden brown, about 5 minutes.
  8. Remove the waffles and keep warm while you repeat with the remaining batter.

Notes
