- 1 cup Unsalted butter
- 3 TBSP Dry milk powder
- 1 cup Unsweetened cocoa powder (sifted)
- 3/4 cup All-purpose flour
- 1 TBSP Cornstarch
- 1 tsp Salt
- 1 cup White granulated sugar
- 3/4 cup Powdered sugar
- 3 Large eggs (room temperature)
- 1 Egg yolk (room temperature)
- 2 TBSP Oil (canola or vegetable)
- 1 tsp Pure vanilla extract
- 1 cup Semi-sweet chocolate chips
Instructions
- In a large frying pan over medium heat, melt the butter while stirring occasionally until it becomes foamy and starts to brown before adding the milk powder.
- Continue stirring until the milk separates and the butter turns amber, then add the sifted cocoa powder and heat for 30 seconds before cooling the mixture in the freezer for 15 minutes.
- Preheat your oven to 350℉. Prepare a 9×9 inch square baking pan with nonstick spray and parchment paper for easy removal.
- Combine the flour, cornstarch, and salt in a small bowl and set aside.
- In a large mixing bowl, use a mixer to combine the granulated sugar, powdered sugar, eggs, and egg yolk, beating on high for 3 minutes.
- Fold in the cooled butter, oil, and vanilla with a spatula before mixing in the dry ingredients until just combined, then add the chocolate chips.
- Transfer the brownie batter into the prepared pan and bake for 34-36 minutes until the edges are set but the center remains slightly underdone, allowing it to finish baking as it cools.
- Let the brownies cool in the pan on a rack, then remove and cut into 16 squares.
Notes
Ensure the butter does not burn while browning; watch it closely.
Allow the brownies to cool completely before cutting them for cleaner edges.
