  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg, at room temperature
  • 1/3 cup (65g) packed light or dark brown sugar
  • 1/4 cup (60g/ml) milk, at room temperature
  • 1/4 cup (60g) sour cream or plain yogurt, at room temperature
  • 2 Tablespoons (28g) unsalted butter, melted
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1 cup (200g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, melted


Instructions

  1. Preheat the oven to 350°F (177°C). Grease donut pan(s) with nonstick spray and set aside.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this mixture aside.
  3. In a medium bowl, combine the egg, brown sugar, milk, and sour cream. Whisk until smooth and mix in the melted butter and vanilla extract. Combine the wet and dry ingredients, mixing until just incorporated without overmixing. Expect a thick batter.
  4. Transfer the batter to a piping bag, cut a corner, and pipe into the greased donut cavities, filling each halfway.
  5. Bake for 10 minutes until the edges are lightly browned and a poke test reveals they spring back.
  6. Cool donuts for 2 minutes in the pan before transferring to a cooling rack. Grease the pan again to bake any remaining batter.
  7. In a separate bowl, mix the granulated sugar and additional cinnamon. Dip the warm donuts in melted butter and coat them in the cinnamon sugar mixture.
  8. Serve shortly after coating as they taste best fresh. Store any leftovers tightly at room temperature for 1–2 days or in the refrigerator for up to a week.

Notes

Ensure the donuts are not overbaked; they should spring back when pressed slightly on top.
