- 2 1/2 cups ritz crackers
- 1/2 cup unsalted butter, room temperature
- 3 tbsp granulated sugar
- 14 oz sweetened condensed milk
- 4 egg yolks, room temperature
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup fresh squeezed orange juice
- 1 tsp lemon zest
- 1 tsp orange zest
- 1 tsp vanilla extract
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- pinch of kosher salt
- Maldon coarse sea salt for garnish (optional)
Instructions
- Preheat the oven to 350°F.
- Finely crush the ritz crackers by hand or using a food processor, but avoid turning them into dust.
- Combine the crushed crackers with granulated sugar and softened butter, kneading until the mixture resembles dough.
- Press the mixture into an 8-inch pie pan and chill for 15 minutes. Bake for 20 minutes until the crust is fragrant and golden-brown.
- Remove the crust from the oven and let it cool for at least 10 minutes.
Notes
For a creamier filling, ensure that all dairy ingredients are at room temperature.
You can use different citrus juices if desired, but the lemon and orange provide a classic flavor combination.
Garnish with Maldon salt for an added touch of flavor and presentation.
