Ingredients

  • ¼ cup unsalted butter frozen & grated
  • 1½ cups grated apple granny smith, gala, or pink lady
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 large egg cold
  • ⅔ cup heavy whipping cream cold
  • ½ cup cinnamon sweet bits store bought or make your own
  • 1 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, combine the grated apples, flour, sugar, baking powder, and salt.
  3. Add the grated butter and mix until crumbly.
  4. In another bowl, whisk together the egg and heavy whipping cream.
  5. Pour the egg mixture into the dry ingredients and stir until just combined.
  6. Fold in the cinnamon bits until evenly distributed.
  7. Turn the dough onto a floured surface and gently pat into a circle about 1 inch thick.
  8. Cut the dough into wedges and arrange them on the prepared baking sheet.
  9. Bake for 15-20 minutes or until golden brown.
  10. For the glaze, mix powdered sugar, ground cinnamon, and vanilla extract, adding milk as needed for consistency. Drizzle over the baked scones.

Notes

Make sure the butter is frozen for a flaky texture.
Feel free to substitute the apples with your favorite variety.
Store leftover scones in an airtight container for up to 2 days.
