  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Jam or preserves


Instructions

  1. In a large mixing bowl, use an electric mixer to cream the butter until smooth without lumps.
  2. Add granulated sugar and mix until light and fluffy.
  3. Incorporate the egg yolks and vanilla extract, mixing until combined.
  4. Gradually add half of the flour, cornstarch, and salt, blending well.
  5. Mix in the remaining flour until the dough is crumbly and smooth, avoiding stickiness.
  6. Scoop out 1 ½ tablespoons of dough, rolling into smooth balls.
  7. Roll the dough balls in extra granulated sugar if desired.
  8. Place the dough balls on a parchment-lined baking sheet, 1 inch apart.
  9. Use a floured measuring spoon to create indentations in each dough ball.
  10. Spoon about 1 teaspoon of jam into each indentation and chill the cookies for at least 45 minutes.
  11. Preheat the oven to 375°F and line two cookie sheets with parchment paper.
  12. Bake the cookies for 13-15 minutes until golden around the edges, one sheet at a time.
  13. Cool the cookies on the sheet for 15 minutes before transferring them to a rack.
