- 1 cup butter softened
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup Rainbow Sprinkles
Instructions
- Preheat the oven to 350 degrees F and prepare two baking sheets without using parchment or silicone mats.
- In a large bowl, mix softened butter and sugar with a hand mixer until smooth; then add eggs and vanilla, mixing until fluffy.
- Add flour and salt to the bowl and mix until a cookie dough forms.
- Divide the dough into six balls. On a floured surface, roll each ball into a rope about the width of your index finger.
- Cut the ropes into one-inch pieces and roll each piece in a bowl of rainbow sprinkles.
- Arrange the cookies on the prepared baking sheets.
- Bake for 8-10 minutes or until they turn golden brown on the bottom, then remove and cool.
Notes
For extra flavor, consider adding a pinch of cinnamon to the dough.
If the dough is sticky, refrigerate it for about 30 minutes before rolling into ropes.
Store cookies in an airtight container to keep them fresh longer.
