- 1 cup (200 g) packed brown sugar
- ½ cup milk
- 1 cup (258 g) creamy peanut butter
- 1 teaspoon vanilla extract
- 1 pinch kosher salt
- 3 cups (270 g) old-fashioned rolled oats
- 1 ½ cups (273 g) semi-sweet chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium saucepan over medium heat, melt the butter, brown sugar, and milk, stirring until smooth. Bring to a boil and cook for 1 minute, stirring constantly.
- Remove from heat. Add the peanut butter, vanilla extract, and salt; stir until smooth and well combined.
- Include the rolled oats and stir until they are evenly coated with the mixture.
- Press the mixture firmly into the prepared pan, creating an even layer.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring after each, until melted and smooth.
- Spread the melted chocolate evenly over the oat layer.
- Refrigerate for 30 to 45 minutes until the bars are fully set.
- Lift the bars from the pan using the parchment and cut into squares.
