- 8 tablespoons (113 grams) unsalted butter
- 2/3 cup (140 grams) granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 1/4 cups (152 grams) all-purpose flour
- 8 grams (2 tablespoons) very high quality bright green matcha powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a small baking sheet with parchment paper.
- In a mixing bowl, stir together the melted butter, sugar, egg yolks, and vanilla extract until well combined.
- Sprinkle the all-purpose flour, matcha powder, baking soda, and salt over the wet mixture, and gently stir until just mixed.
- Press the dough down flat in the bowl and divide it in half; you should get 6 cookies from each half.
- Roll each half into balls, lightly coat them with extra granulated sugar, and arrange them on the baking sheet with space in between.
- Bake for 10-11 minutes until the cookies spread, begin to crackle, and have a dry surface. Allow them to rest for 2 minutes on the baking sheet before transferring to a wire rack to cool.

Ensure the matcha powder is of high quality for the best flavor and color.
Allow cookies to cool completely for better texture.
You can adjust the sweetness by slightly changing the sugar amount.
