Ingredients
Scale
- 1 cup (8 oz/225 g) salted smooth peanut butter
- ¼ cup (2 ½ oz/71 g) maple syrup
- 4 tablespoons almond flour
- ¼ teaspoon salt
- 2 cups (12 oz/340 g) chopped milk chocolate
- 1 teaspoon vegetable oil
- Sprinkles and Candy Melts
Instructions
- Line two small trays with parchment paper and set aside.
- In a medium bowl, combine peanut butter, maple syrup, almond flour, and salt until fully mixed.
- Allow the mixture to rest for 10 minutes to thicken.
- Divide the mixture into 16 equal portions, shape into egg forms, and flatten slightly.
- Place the eggs on one tray and freeze for 1 hour until firm.
- In a microwave-safe bowl, mix chopped milk chocolate and vegetable oil.
- Microwave in 30-second intervals, stirring each time, until melted and smooth, or melt over a double boiler.
- Working in small batches, dip each frozen peanut butter egg into the melted chocolate, using a fork to lift them out.
- Gently tap the fork against the bowl to remove excess chocolate and place the eggs on the second prepared tray.
- Repeat the process for all the eggs and refrigerate for about 30 minutes until the chocolate sets.
- Melt Candy Melts according to package directions and fill piping bags with small round tips for decorating.
- Pipe decorations on each egg and add sprinkles while the melts are still wet.
- Refrigerate until decorations are set, about 30 minutes.
- Serve chilled with milk and store leftovers in an airtight container in the fridge, separated with parchment paper if stacked.
Notes
For a smoother chocolate coating, ensure your chocolate is completely melted and at the right temperature when dipping.
You can substitute the milk chocolate with dark chocolate for a richer flavor.
These treats can be stored for up to 2 weeks in the refrigerator.
