- 1 1/2 cups Old-Fashioned Oats
- 1/2 cup Butter, Softened
- 1/2 cup Brown Sugar
- 1/4 cup Sugar
- 1 Egg
- 1 tsp Vanilla
- 1 cup Raisins
Instructions
- In a medium bowl, whisk together flour, cinnamon, baking soda, and salt, then stir in old-fashioned oats and set aside.
- In a large bowl, cream softened butter, brown sugar, and sugar together until well blended.
- Add in the egg and vanilla, mixing until incorporated, and scrape down the sides as needed.
- Blend in the dry ingredients until just combined, followed by the raisins.
- Cover the cookie dough and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Once the dough has chilled, drop 1 1/2 tablespoon size scoops onto the prepared sheet, ensuring space for spreading.
- Bake for 10-12 minutes, then cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Feel free to add nuts or chocolate chips for extra flavor.
For chewier cookies, avoid overbaking them; they should be slightly soft when you remove them from the oven.
The dough can be made ahead of time and stored in the refrigerator for up to 24 hours.
