Instructions
- Preheat the oven to 325°F and prepare a 9-inch square baking pan lined with parchment paper and sprayed with nonstick cooking spray.
- Combine melted butter and graham cracker crumbs, then press into the bottom of the pan. Bake for 6 minutes and let cool, keeping the oven on.
- Make the cookie dough by beating softened butter, brown sugar, granulated sugar, salt, and vanilla together until smooth. Mix in flour and chocolate chips until just incorporated.
- Cream together cream cheese and sugar until smooth, then mix in the egg and vanilla. Pour the cheesecake batter into the prepared crust.
- Form cookie dough into clumps, flatten slightly, and distribute over the cheesecake batter, ensuring to cover most of the surface.
- Bake for about 30 minutes, or until the top feels dry and the bars look set when shaken gently. Allow to cool completely on a rack.
- Lift the bars from the pan using the overhang, slice into pieces, and serve cold or at room temperature.
