Ingredients

  • ½ cup butter
  • 20 oz mini marshmallows
  • 9 oz box rice crispy cereal
  • 2 tsp vanilla
  • ½ tsp salt
  • red and orange food coloring
  • 1 cup green candy melts
  • 1 cup orange candy melts
  • orange sprinkles


Instructions

  1. Line a 9×13 pan with parchment paper.
  2. Melt butter in a large pot over medium-low heat. Once melted, add 1 ½ bags of mini marshmallows, setting aside the rest.
  3. Stir continuously with a rubber spatula until the marshmallows are fully melted on low heat.
  4. Remove from heat and mix in vanilla, salt, 10 drops of orange food coloring, and about five drops of red food coloring, adjusting for desired color without overusing food coloring.
  5. Add about half of the rice krispies to the marshmallow mix, scraping the bottom to fully incorporate everything.
  6. Mix in the remaining marshmallows and rice cereal.
  7. Pour the mixture into the prepared pan and spread it evenly.
  8. Allow the rice krispies to cool for about 10-15 minutes.
  9. Using the parchment paper, slide the treat onto a cutting board.
  10. Cut the treats into 8 equal sections by halving them longways and making three cuts width-wise to create rectangles, then diagonally cut each rectangle to form carrot shapes.
  11. Melt green candy melts in a microwave-safe bowl in 30-second increments, stirring in between.
  12. Transfer melted candy into a piping bag or zipper-top bag and cut a corner off.
  13. Pipe out 12 v-shaped stems onto parchment paper on a baking sheet and refrigerate for 10 minutes to harden.
  14. Gently flip the rice krispie treats out onto new parchment paper, then cut in half longways and diagonally to create six carrot-shaped pieces.
  15. Melt orange candy melts in a bowl, again in 30-second increments, stirring until smooth.
  16. Transfer melted orange candy to a piping bag and drizzle over carrot shapes, adding orange sprinkles immediately after.
  17. Attach a small dot of orange candy melt at the top of each carrot and gently place the stem on top.
  18. Let the treats sit for a few minutes before serving.

Notes

For stronger colors, add food coloring gradually and taste to avoid overly sweet flavors.
Make sure to work quickly as the melted candy can set fast when cooling.
Store leftovers in an airtight container at room temperature.
